Caerphilly originated in Southern Wales and was originally a cheese eaten by coal miners since it was filling, cheap, and sturdy. As demand and popularity grew, cheddar makers in Somerset began to make Caerphilly with surplus milk after cheddar production. Since it ages much faster than cheddar, it was also a quicker source of income for the cheese makers. By the late 1800’s, most Caerphilly was made in England.
